Because when Ven's heart connected to Sora, it connected to Vanitas as well. And because Vanitas had no face, he turned to look like Sora.

{I forgot a word that would make this explanation so much more easier and more understandable.}

Well, at first when Vanitas was formed when Ven got his darkness extracted he didn't have a face at all. But since he was still a part of Ven, he still had connections to him as well. Thus, when Ven merged his heart with Sora's, it affected Vanitas's appearence.

Sora connected with Ven's heart when MX brought Ven to Destiny Islands after the creation of Vanitas prior to that Vanitas had no face. When Ven let Sora into his heart vanitas took the appearance of Sora had it been anyone else Vanitas would have looked like them. Nomura has said it time and time again the heart shapes the vessell

damn aqua you beat me to it.
When Sora filled in Ventus's heart Vanitas was affected as well.

"The face that was revealed under the mask was no different from the unverse. His skin was the same deep black color of his body and his eyes were red."

He had a face before, but it wasn't human. Otherwise, everyone above is correct.

Actually, his face didn't necessarily have a physical appearance up until Ven connected his heart with Sora's.

tutti frutti. Vanitas looks like Sora due to Ven merging his damaged heart with Sora. When Ven and Sora's heart merged together, Vanitas took the appearance of Sora. This is due to Ven and Vanitas being separated into beings of pure light and pure darkness respectively by Master Xehanort in order to forge the X-Blade. Nomura stated in an interview that whomever Ven merged his damaged heart with, for example Riku, Vanitas would look like that person.
