So say Yoko Shimomura is my favorite musician, and KHIII features a full soundtrack of hers... Since I get KH3, does that mean that I've created a paradox?

You create one anyway. As stated in my post, if you chose yes, and they were removed, thime would alter as result, but since time alters hugely due to one little alteration, its possible KH would never have existed, and even more likely, you would never got the offer for removing their existance thus forcing time to re-alter itself back to before your decision, thus causeing a time paradox.
