Ingredients (for 12 cupcakes):

(I had to convert from gram to cups, so I just put both numbers in case I made a mistake)

 

140g butter, softened

2/3 cups white sugar (125g)

3/4 cups plain flour (100g)

2 eggs

1 tablespoon milk

3 teaspoons cocoa powder, unsweetened

3-4 tablespoons sparkling water

 

400g cream cheese

Grated zest and juice of 1 lemon (the juice alone would be enough too)

6 teaspoons icing sugar (powdered sugar)

3-4 teaspoons non-carbonated water

 

 

Step 1: Preheat the oven to 360°F/180°C

 

Step 2: Beat butter and sugar in a large bowl with a mixer, until it’s light and fluffy.

 

Step 3: Add eggs, 1 at a time, beating after each addition.

 

Step 4: Then add the plain flour, cocoa powder and milk, and beat well. At the end add the sparkling water, and beat.

 

Step 5: Put muffin/cupcake paper liners into a muffin pan (or if you don’t have some, just grease the pan with butter)

 

Step 6: Spoon the mixture into the paper cases (in the pan)

 

Step 7: Bake them for 10-15 minutes (just check after 10 minutes if they’re ready), and when they're finished let them cool for 10 minutes.

 

Step 8: Beat the cream cheese in a bowl with a mixer, add the grated zest and juice of the lemon and then the icing sugar, and beat well.

 

Step 9: add the non-carbonated water, and beat until it’s smooth.

 

Step 10: Spoon the frosting into a piping bag, and pipe it onto the cupcakes.
