Will the seven princesses of heart be in KH3? Yen Sid said to King Mickey that Master Xehanort would capture all seven princesses to forge the X-Blade. Can Maleficent and/or Pete still capture seven princesses of heart (esp. Kairi)?

Well, technically, it's Riku/Mickey's journey were talking about. EX: Riku and King Mickey goes to all the worlds (esp. Frozen world/Arendelle) to help out Disney characters (including Elsa or Anna). They could go to the realm of darkness and Castle Oblivion to find Aqua and Ventus so they could be recruited to find Terra. Then, After finding Terra, they'll find Kairi, Lea, Sora, Donald and Goofy to defeat Master Xehanort and his true Organization XIII.

For all playable main characters (like Sora, Donald and Goofy), Riku and King Mickey should be playable as well. Where should Riku and King Mickey's story start? I know Sora, Donald and Goofy's story is in progress.

That makes sense for Riku and King Mickey to go to Disney worlds (esp. Arendelle/Frozen world). Lea can help Riku and King Mickey but he could be with Kairi.

Do you really think King Mickey will fight Master Xehanort? If so, think of King Mickey vs. Master Xehanort like Yoda vs. Supreme Chancellor (Emperor) Palpatine/Darth Sidious.

Then, Riku and King Mickey goes to the realm of darkness to find Aqua. Then, go to the Keyblade Graveyard and find Sora and co. to defeat Master Xehanort.

If Riku and King Mickey saves Aqua, Is Aqua gonna be a party member for Riku? (if Riku's playable)

Everyone's got the point here about previous Keyblade wielders/masters. If Riku's playable, I suggest start off going to Disney worlds for some missions with King Mickey, go to the realm of darkness to find Aqua.
