I think those mushroom type heartless are up to something. I don't know if this is a true case of operant conditioning, but how these guys work is very similar:
1. They give out good rewards.
2. They randomly appear in specific areas.
3. They make you do something in order to get the aforementioned reward.
4. They punish you if you fail to complete the task by running away and forcing you to waste time looking for them again. Or, not running into them in a place where they spawn will make normal, attacking heartless spawn.
Say you want an item a mushroom can drop. Mushrooms have designated spots they appear in, but whether or not they show themselves is up to their own discretion. So, you look for them, going to the same room(s) over and over again until you find what you want. When you do find them, you need to perform specific actions--which are up to their discretion--if you want what they have. When the White Mushroom shivers, for instance, you cast fire magic; when it spins around, you use aero; etc. When the Rare Truffle sees you, it hops up and down, wanting you to put it in the air. Now, the journal entries claim the White Mushroom wants you to help with magic, and that the Rare Truffle wants to be in the air, but I have to wonder if it's just an act on the mushrooms' part. How can getting shot at with Thundaga or slammed in the air with a giant key be pleasant? What do the mushrooms have to gain from that?
My theory? They're totally stringing Sora along. They have him, and us, on a reward system that they gain nothing out of but their own curiosity. They're training Sora/us with positive and negative reinforcement (respectively, rare items and making things difficult for us). They'll keep doing it until we get bored, or the game crashes, or whatever. I can only assume KH is one big Skinner Box, only with more hearts, and the rats have time travel powers. Oh, and the mushrooms can't even be killed. Well, they have HP, but they'll always run away the moment you attack them so you'll never get a chance.
They're indestructible and they have powerful, high-demand items at their disposal. Screw Xehanort, it's a wonder these guys haven't taken over the Kingdom Hearts universe yet. Oh, wait.

I think of weird things in the shower.
