Apparently the white chocobo is a guest character. I'm don't really know how to link the video but look up IGN 'why we're excited for lightning returns'.In one battle scene, we can clearly see the chocobo in a battle with lightning.

My guess is, the White Chocobo is Odin. Toriyama said since the goddess gives power to the Eidolon's, her death made them lose their power and they could appear in another form. It's said that the White Chocobo seems to know Lightning and lets her and her alone, nurture it to better health. Even light notices this, which makes me think the White Chocobo is Odin.
