Ok so I know that if you get that USB memory card reader to transfer data from the card to the ps3 hard drive but can you do it vice versa? Cuz I had all the FF games from the PSN and just got hard copies for the psone. Can I transfer my data over to my ps1 memory card using that card reader?

PSone disk work in PS3s so you wouldn't have to do that, also I don't think you can do it the other way.

My ps3 doesn't play anything but ps3 games

Have you tried playing the psone games on the PS3?  My boyfriends played Metal Gear Solid PSOne on my PS3.

Most models of the PS3 only play PS3 games; earlier production models has backwards compatability for PS2 (and thus, PSOne) games, but they discontinued it after a short while.

 

I don't think the save data can go backwards, sorry. Try googling it, maybe somebody has found a neat workaround?

Every PS3 can play PS1 games, it's only the PS2 compatibility that was removed.
