What exactly are the lucky emblems and why are they in the worlds? They have no reason to be there and no explanation. Are they just a non-canon thing to make the gameplay more interesting?

i believe that was the idea. disney have been putting hidden mickeys into their stuff for years probably just homage to that

Yes, but an entire cutscene acknowledges it as well as many voice line throughout the game (when you're near one). That make it kind of hard to ignore.

i dunno it was a joke i didnt put much thought into it

I think it's pretty much what ocean's rage said, it's more of an instance of putting a gameplay mechanic over the story, and a homage to Disney sprinkling hidden mickeys throughout their stuff. If I recall the cutscene we get just says if you encounter them it's supposed to bring you good luck, I don't think we'll get anything more in depth beyond that. I believe we also don't get very lore heavy explanations for other gameplay mechanics like the trinity marks in KH1.

Trinity marks were never part of the story. If I'm remembering correctly, there was only one line acknowledging it, but that's not enough to justify it being canon.
