I never knew about this: Why does Xion transforms into those forms and fights against Roxas?

The reason she fights against Roxas is because Xemnas re-programmed Xion to fight against Roxas so that they could both fight each other and have one or the other kill each other. So that way Xemnas would only have one keyblade wielder in the Organization. As for why she's in those forms, it has something to do with those generator things that Roxas was order to implant in some of the worlds.

I would suppose those forms have something to do with Sora's memory.

 

Even though i have no idea about where the 1st and final forms come from, i would say that the weapon she has during the 2nd form resembles the arm of the Chimaera boss from KH1 Final Mix and her 2nd form resembles Kurt Zisa, a boss from KH1.

 

The final form could just be Sora in its entirety... I'm not too sure, so i won't say more...

This I would also like to add that a special phenomena had occurred it apppeared that xion had begun to absorb Sora's memories and claim them as her own giving her own personality. This slowed down even halted Sora's memory restoration process in short she had all the necessary attributes to become a perfect Sora clone. Xemnas planned for Xion to absorb roxas and effectively become Sora as a bonus the real Sora would be unable to ever wake up.
