When the heartless attacked Radiant Garden, Kairi's parents(And her grandmother) were probably killed during the conflict and having their world consumed by darkness, while Kairi got sent to the Destiny Islands thanks to Aqua's spell?

Could have been. We honestly have no info on her parents and very minimal info on her grandmother so anything could have happened.

It's open for interpretation. For all we know, Kairi's parents and grandmother may have also escaped and went to Destiny Islands as well via other means. They just didn't have any screentime in the games. Maybe she interacted with them during CoM for all we know and care...

It's a possibility. But hopefully, we can find out in Kingdom Hearts 3, about what really happened.

It has been confirmed since kh1 that Xehanort sent Kairi into the sea of worlds sometime before all of that, but as for the other characters, it could be anything. I like to think that Kari's Grandmother just faded away. As for the non-important citizens, maybe some of them were brought back to life in the same way much of Organization XIII was. Cannon reason for NPC's to populate Radiant Garden? I think so.

We dont know about her grandma and parents. Probably left dinner on the table before the heartless took over.
