How does Young Xehanort know about the fact that Sora has multiple hearts inside him? Is it ever explained? Also how does he know that Riku was originally meant to inherit the keyblade and not Sora? As far as I am aware both Ansem and Xemnas did not know any of this and neither did Master Xehanort so how did Young Xehanort find out all of that information?

Well, Roxas and Xion both returned to Sora, so Xemnas and thus YX knew that. If he knew that Sora has Ven's heart, it would be because Xemnas came to the conclusion after seeing Roxas. If Sora wasn't in possession of Ven's heart when he became a Heartless, Roxas would've looked exactly like Sora. As for Riku, Ansem was watching him, and probably watched the whole ordeal with Riku taking the Keyblade form Sora in KH1.

IF Sora didn't have the part of Ven's heart that he does, Roxas would have appeared as Sora, Xemnas is also an "Older" version and has some of Terra's memories, we know this because in Kingdom Hearts 2 Final Mix, we see him talking to Aqua's armor and her Stormfell Keyblade saying "It's been too long, old friend" Does that mean he will know what Ventus looks like still? Did he specifically pick Roxas because he looked like Ventus and knew Ventus was strong? There are a lot of unanswered questions that Kingdom Hearts 3 will hopefully tie the loose ends of.

He knew about Xion and Roxas growing their own hearts it's not quite clear whether he knew about Ventus though he might have a hunch based on Xion and Roxas's appearance.
