In my opinion, I think Days was the easiest KH game I played. I have to admit that there were two bosses that got the heck out of me >_> but it was easier than KH II at least.

Just to state a point here, the Wii U is on par with the current generation so it is as powerful as the PS3 (afaik graphic wise too) and the second screen has nothing to do with it. Correct me if I am wrong.But I do not see KH III as a Wii U game due to SE sticking to Sony for numbered titles anyway.
