I have beaten Birth by Sleep and the original Final Mix at level 1, but KHFM is easier than BBS, but that's just my opinion. 

Hard one imo. I think Aqua LV1 and KHFM LV1 are the same in difficulty. They're not so bad. I have done KH2FM LV1, BBS Aqua LV1, and KH1FM LV1. DDD has the worst LV1 because it's a grind fest. DDD LV1 is impossible without NG+ as well.

Definitly the easiest of the three is birth by sleeps level 1 because you can still get defense boosts, second chance, once more, and other abilities.  The only thing you cant really get is increases of natural defense and strength.  But with the way level 1 works, most people shouldn't have a problem beating level 1 birth by sleep too much.  Definitley the two hardest to level 1 are 358/2 and DDD sheerly because their game mechanics are not designed for someone to beat it at level 1.  Enemy ai in DDD will absolutley wreck people in DDD and the boss fights in both will become practically impossible at level 1.  

KH2:Final Mix for me. It is my favourite game in the series after all and I know it very well. Played countless hours of it. Although I had a bit of a struggle going through the lvl 1 run and refused to do Org. XIII Data fights because I would rage a lot.

I honestly wouldn't know since I've never dared an attempt at cracking a Level 1 playthrough of any given KH game, and I don't plan on doing so anytime soon! I may love a challenge, but I don't think I'd be up for such a challenge as this! X3
