FINAL FANTASY IX is the only game from the first XI to only be available on one platform, in this case: PlayStation. Sure you can emulate it on modern PlayStation consoles but that's the same if not worse as backwards compatibility which you can also do. Since they've released VII and VIII on PC and will soon release III on PC, it makes sense to release it on PC.
FINAL FANTASY XII is only available on PlayStation 2, and following FINAL FANTASY X/X-2 HD Remaster it seems likely that this is next especially since Kitase wants it to be done next and Kitase "inherited" the series according to Nomura. Remastering it in HD with Revenant Wings as cutscenes and TACTICS: THE WAR OF THE LIONS for PS3 & PS Vita would make a lot of sense.
Ito directed these games (and even produced XII and designed TACTICS) so he should supervise these releases like Toriyama supervised X/X-2 HD Remaster.
Only problem? Ito hasn't worked on a released game since the 3D remake of FINAL FANTASY IV. Apparently his team (that made XII) is still intact working on his next project which could be XVI.
If Ito doesn't want to supervise these projects the likely candidates would be:
Hashimito for FINAL FANTASY IX PC. He produced the original game however he's currently producing FINAL FANTASY XV and Kingdom Hearts III.
Toriyama for FINAL FANTASY XII HD Remaster. He directed XII's sequel and supervised X/X-2 HD Remaster.
Hiroshi Minagawa for FINAL FANTASY XII HD Remaster. He co-directed XII and directed the art and events for TACTICS but he might be too busy with FINAL FANTASY XIV: A Realm Reborn.
Whoever supervises these projects, it would still be great to get IX on PC and a XII HD Remaster for PS3 & PS Vita.
