It has to be taken directly from the chest and pocketed or taken away from the chest period for the curse to take hold. Jack wasn't cursed till he pocleted the last coin he took from the chest after putting the others back in

Barbossa mentions how they traded the gold away and had to get it back and there was no curse put upon those who got the gold off the crew after they took the gold from the chest.

We know this cos Will gets his off of his father, and Will does not get the cursed passed to him. Nor does Elizabeth who takes it from Will.
