To get a chocobo you need to be level 20 and do the grand company quest. After that you do a quest in I think South Shroud where you can get it.

This chocobo can also be a companion that can help out in fights and such but only in the open field

You will get some mounts throughout the main story too but those will be a while away

I thought that was part of the main quest. You choose between 3 different factions, one in each main city.

Yeah you should have done that part already so you can just head off to South Shroud and find the quest called My Little Chocobo

You are two levels away to do the companion quest so the chocobo can fight alongside you. It's in the same place as the quest above.
