Why did Riku fight Xion? Who did Riku think he was fighting before taking the blindfold off?

I... don't know.  Perhaps he thought she was another nutjob Nobody in the Org.

Xion actually fought riku. Xion recieved a mission to take out an 'imposter' who was wearing their cloak. Xion lost and got a lecture from riku leaving xion defeated and confused.

This. He didn't think it was anyone specifically (I think) but his surprise to see her, if you're confused, is due to the fact Xion looks a lot like (a young) Kairi

theres also the chance that he saw sora, it would confuse him since sora was asleep at the time.

ya, thats why he HAD to defeat roxas. Roxas was going to try to destroy kingdom hearts and xemnas would have destroyed roxas before he had the chance. Riku needed roxas in order to wake up sora so riku defeated roxas and brought him back to diz where they then put him into the alternate twilight town to keep him sake and protected until sora can finally wake up.

Xion's face was different depending on who looked at her so who knows who riku saw.

According to the manga Riku could've seen her as either Sora or Kairi (He's seen her as both, is the later chapters) But the higher probability is that he saw Sora.

Yep, that's how it went.  As for who Riku saw when he looked at Xion, didn't he make a comment about her looking just like Kairi (or a reference to that affect) when him and Xion were on Destiny Islands?

Yep, yep, Riku said that Xion looks like the girl Sora cares about and Xion having some of Sora's memories knows who Kairi is somewhat.

Riku was the supose "Imposter" that was with their ORGXIII coat.

Diz gave it to him during Chain of Memories. On another note, I wonder how Riku easily beat Xion, but couldn't beat Roxas and had to transform into Ansem to finally capture Roxas.
