Yeah, I'm kind of bored so I thought of making this for you guys. I've been eating healthy foods for almost a year and it's helped me out a lot. I used to believe that healthy usually meant the flavor wouldn't be as good. Yet, during this past year of eating healthy I've had some of the best food of my life. I want to share some of my favorites in hopes that others won't fall into believing the same myth I did. So, lets go!
I actually don't like oatmeal. It tastes too much like mush to me. But baked oatmeal has the flavor of oatmeal but is a solid bake. The blueberries and bananas together with the oatmeal and walnuts makes this a really tasty breakfast. This is from my favorite food blog Skinnytaste which you'll see more of later in the list.
I love Spanakopita! Basically, it's a Greek spinach "pie" made with a blend of cheeses usually including feta, spinach, and philo dough. I really love this recipe because they are made in individual pieces that makes it easy to portion control. And you can't complain with 43 calories a piece.
It's funny how Quinoa is being painted as a hip and new health food even though I remember eating it in Paraguay back when I was really little I'm really glad it has been introduced to the states. Not only can I made some food I haven't had in years, but I like how Americans are adopting to the new ingredient. Like these pizza bites. If you ever want to replace pizza rolls from your diet, this is a good choice. Although quinoa is a seed, it tastes like a grain and goes well as a "crust" for this recipe. And with the cheese, pepperoni, and sauce, it makes for a good snack or meal. I really liked how these turned out, I just wish I had more mini muffin trays
I have a hard time incorporating veggies in my diet since there aren't a lot of vegetables I like. Peppers are one of the few I do, so this idea really struck with me. I suppose it's just veggies and dip, but I like the idea of cutting them into scoops to use in place of chips. Pair it with a healthy dip and it's much better than having potato chips.
The town I live in has it's own orchard that sells tons of unique jams, sauces, flour mixes, local honey, apple donuts... It's so good, but they are only open during harvest. So the rest of the year I have to fend for myself until they open again. I love to get their apple butter, so I was really glad to find an easy apple butter recipe. I cut the sugar in half for this recipe, and it tastes just like the apple butter my local orchard makes ^^
Lately I've gotten into having granola bars for breakfast so I can run out the door with them. This is my absolute favorite granola bard recipe. Not only is it filling and tasty, but it's also easy to customize it how you like. Last time I made these with almonds, cranberries, and white chocolate chips, and next time I'm thinking of doing recess pieces
I had to include one of Katie's desserts in here. She's like me and loves to make desserts, but that's not so easy to do when you're vegan. She is amazingly creative. I am always in awe of how she is able to cut out milk, butter, and eggs, and substitute them with bananas, coconut oil, and even tofu. This is my favorite of her recipes, mostly because I always have the ingredients. What's great about it is that it's very filling so a small piece is all you need.
I love anything buffalo wing flavored, and these burgers are amazing. I love the spice to them, the slaw adds a great texture, and the blue cheese dressing really finish it off. The one thing it needs is an egg white or two since they want to fall apart on you. However, these are my favorite burgers to have and are so much better and healthier than anything McDonald's could make.
My dad always wants me to make banana bread whenever our bananas get too ripe, but the recipe I used to use wasn't very healthy. I found this one and it's my favorite. It uses much less sugar than usual banana bread recipes, but doesn't lose the sweetness. I like to make them as a loaf or as muffins for breakfast.
I don't cook lamb that often, but I wanted to try this one it. It turned out to be really delicious! The seasoning for the lamb was perfect and the sauce is light yet savory. If lamb weren't so expensive I would make this every week
