FINAL FANTASY V and FINAL FANTASY VI are larger than FINAL FANTASY IV. This is why they didn't port them to the WonderSwan Color.
The hardware available might not suit remakes for these titles. Square Enix said in early 2010 they would take a look at the Nintendo 3DS and see if it would be suitable for remakes of FFV and FFVI along with Before Crisis. We haven't heard anything since. The possible requirement of supporting the 3D might be a turn off. Would it truly make sense if these titles supported 3D when none of the others do? As for the PlayStation Vita, it doesn't make much sense to release a remake of this scale exclusively on a console that has a small user-base.
Hiroyuki Ito's absence. The last released game Ito worked on was the FINAL FANTASY IV remake for Nintendo DS. Ito was the Game Designer and Battle System Designer for FINAL FANTASY V and he was also the Co-Director, Game Designer, Battle System Designer for FINAL FANTASY VI. He also supervised the Game Boy Advance ports. It wouldn't make sense without him working on them. It is rumoured he is working on new major title.
Matrix Software (the company who handled the development of the 3D remakes of III, IV and most versions of THE AFTER YEARS) just finished developing remasters for iOS and Android. The in-game sprites and menu portraits were also remade by Kazuko Shibuya who made the original sprites for the SNES versions. It wouldn't make sense to do all this work and then just release remakes of them in the next year or two.
I hate to say it, but I can't see remakes of either of these games coming before the series' 30th anniversary at least.
