Ok, so let's imagine there's an anime out there that adapts half a chapter per episode, that means that by the time it reaches episode 50 it will be adapting chapter 25. The episode number (50) is ahead of the chapter number (25).

Since One Piece had a fast start, it adapted a lot of chapters in a short amount of time. So the episode numbers were very behind that of the chapter numbers. This has continued up to today. But then the anime slowed down, meaning that it was not adapting material faster than the manga was outputting at a time. Now episodes are adapting less than a chapter (it's been this way for quite some time now). So eventually, the episode number will catch the manga number, in the sense that the content of chapter X will be adapted in episode of the same number X.

So let's suppose that happens when we reach the 1000th episode, this means that it would adapt the content of chapter 1000, even if the manga itself is already on chapter 1050 or whatever at that time.

Don't think about this in terms of time, but rather, in terms of the amount of content that is covered. One Piece anime is slower paced than the manga but comes out more regularly, so it makes up the difference.
