You do a sidequest to find 3 chocobos and then you can fast travel around for the last batch of sidequests

in first soldier you preselect a chocobo and then can mount at signs, so i expect in rebirth you can probably walk up to them to choose one to mount?

or maybe you have to preselect at the farm

Although you can't run around on them in Remake, just fast travel
