They wouldn't do that considering they recently released the box for the 10th anniversary containing 358/2 Days and Re:coded.
Plus remaking 358/2 Days for the PlayStation 3 would make Re:coded and Kingdom Hearts 3D seem of less importance. Which is definitely not the case with KH3D.
Plus the way Nomura has mentioned this type of topic in recent interviews would not make something like this likely.
The only games in real need of a remake are the SONY ones. Birth by Sleep was released on a console in desperate need of it's successor. Re:Chain of Memories was never released in Australia or Europe confirming these two games need a port or remake.
Surprisingly new copies of Kingdom Hearts and Kingdom Hearts II can be still be purchased at various stores. And I can personally confirm that these are new copies and are NOT pre-owned.
It's nice having a limited edition copy of Kingdom Hearts.

They'd have to completely remake 358/2 Days. The sprites alone in that were 2D rendered to look 3D. It's just a mess, I can't believe this."
