Flareon is the absolute worst eeveelution, try and get an Arcanine/Ninetales, but for me, I used my physical sweeping Lucario, it knocked almost all his pokemon out in one hit with Close Combat.

Krookodile (If you can acquire one) is strong against nearly his entire team, provided you found earthquake (behind strength rocks on route 15) and Dragon Tail to stick on it, and it's consistently useful throughout the entire game (Including post-champion). I was lucky enough to get an Adamant one that curbstomped 75% of the game.

Krookodile is actually a really good suggestion, due to his Ground/Dark typing having perfect coverage for the battle. Crunch Beeheeyem and Earthquake everything else.
