In all due seriousness, I don't think there's any meaning to it other than being Roxas' Paopu fruit to Axel and Xion. There's also the fact about someone important visiting a disney park and eating the sweet treat, liked it, then decided to add it to the game.

WOW. That's a pretty good answer

Because icecream brings people together :3 and because everyone wants to get that winner stick, also because ice cream.

Fool. Have you ever tasted it? I hear it tastes pretty good. Someone once made a thread with directions to make your own.

Roxas' introduction in KH2 had him experiencing summer with his friends.  While at Disneyworld/land(I don't remember what it is) Tokyo, Nomura had Sea-salt ice cream and thought that's what kids do in the summer, relax and eat ice cream.  So he used it in Kingdom Hearts 

Sea-salt.  Ocean.  Destiny Island.  It's another way to connect him to Sora.  And because Nomura likes sea-salt ice cream.

Because Nomura had it once at the Disneyworld in Japan and got hooked on the stuff. He bought this stuff by the pounds and that's the only thing he eats when he goes on his creative fasts to do storyline and character designs for his projects

Sea Salt comes from the sea, so I guess its symbolic of the ocean, and, destiny islands.
