Final Fantasy IX and Final Fantasy VIII are both pretty sadly underated. Both are amazing games and JRPGs. They're both better than Final Fantasy VII.

I don't think that they will be done with the PS3 completely, just Final Fantasy. Kingdom Hearts 1.5 will still be PS3 and Versus PS4. SE always does 3 main Final Fantasy games before heading off into the next gen and then the brother titles follow. We've had Final Fantasy XIII, Final Fantasy XIII-2 and the last one is going to be Lightning Returns. But KH 1.5 is still going to be PS3.
