What happens if you don't wear it when you go inside that portal? What will happen?

No, the coat protects them from the darkness.

I wish I could provide a link or something for where I got that from, but that is the case.

I suppose that exposure to the darkness will cause nobodies to fade into the darkness? Not really sure what happens to them if they don't wear it, but they do need it.

 

As for the case with Sora and Kairi, they weren't in there for long, so the darkness didn't get to them.

Kairi did enter the portal but since she only has light in her heart she wasn't taken over by the darkness

The Organization coat is meant to protect the person who wears it from darkness when traveling through Dark Corridors. The reason why Sora, Kairi and Pluto weren't affect by the darkness was because they wasn't there for a long time while the Organization constantly uses them.

At the end of Re:CoM, Ansem the Wise says it protects against darkness to Riku ant the King. In the Manga, Pete would get a stomach ache traveling through the portal until Maleficent put a spell on him.
