Is Proud Mode easy to defeat enemies like with boss fights?

It's not too difficult yeah

If you use everything, like food and attractions it's a piece of cake

What about the Ultima Weapon? Can it be on Critical mode or can it be all the modes?

Or the keyblades that Roxas Use?

Ultima weapon is craft able so if you craft it in Proud, you could carry it over to Crit

As for Oath keeper and Oblivion, you need to get all the Lucky Emblems for Oathkeeper and beat the game on Critical to get Oblivion

Both allow you to use Double Form

Yep! Assuming you have the proofs to unlock the blades

If you do, you can use EZ mode on Critical and just put on all the stuff you want to make the game a bit easier
