A playable remake of KHUX wouldn't even be that difficult. They already have a lot of the assets. They have the story, the worlds, the characters, gameplay mechanics can just be copied from KH3, etc.

Ehhhh...I'm gonna defend that one. Naming it "all-in-one" makes perfect sense for newcomers, because they'll know exactly what they're getting into.

Okay, but look at it from the perspective of a new fan. They're going to take one look at that and think "Okay, what's the other saga? Did I miss something?"

Or hell. If you're going to do separate packages, just simplify it even further. Make 1.5 "Vol 1", 2.5 "Vol 2", and 2.8 to 3 "Vol 3". Easy, straightforward, clean.
