There's 3 ways I'd say, start with 0 and just go in order, start from the 1 Remake and go in order, or, my preferred way-

Play 1-2 on PS2 then play 0-5 on remaster.

The evolution of the mechanics will feel more natural, there's story things in 1 I prefer over the remake, and, 3-5's combat isn't as "modernized" as 0 and 6, so, going from the 1 and 2 remake to 3-5 will feel weird.

Then play 0 after 5, as that's the release order, and then 6-7.

Judgment can be played when ever but they both take place after 6, then 7 respectively

Also 1 on PS2 has the amazing hilarious and awesome English dub lol
