GT is not canon but it also goes after Z

Watch DBZ, don't watch Kai

previously, DB and DBZ movies were not canon to the story, but recently the Super movies have either been canon or have been remade into the canon of Super

Kind of? First it was Dragon Ball and that ended. Then afterwards DBZ became a thing that continued the story. GT came out afterwards but as an anime original thing. And then a few years down the road Super became a thing, ignoring GT completely.

Such an underrated game

Super manga is currently still ongoing and we're probably expecting the next show/season of Super to be announced soon since manga has plenty of content to work off now

Super anime and manga were going back and forth with each other for a bit, it was kinda screwy

It's not like Naruto where it's one big thing, and Shippuden being an anime name change. Or One Piece that's just one continuous story.
