Returning with improvements and all that.
 
Gotta go with that rumble racing.
 
It's the closest we'll ever get to a kingdom karts game.This time with original and FF characters added,bigger tracks set around multiple worlds.
 
I can see this being pretty fun.

the Command Board could be a little fun with multiplayer, but KH doesn't really have 'good' minigames so much as it has 'terrible' ones

Skateboarding. I want to have a full-on Tony Hawk game hidden in KH3. (It would also fit the presumably much larger worlds that are coming.)

I'd love to see Rumble Racing return. I love a good kart game, and I feel like it could be really fun if they expanded on that one.

That fruit Volley Ball one from BBS. That would be fun with multiplayer and big teams.

Rumble Racing was freakin' amazing.  Especially with Terra.

 

That, and the Command Board game....if that counts. xD

Skateboarding (come on, too easy to leave out), Command Board most definitely, and maybe Rumble Racing. I was never too keen on the last one but it seems to be a fan favorite for everyone else.
