Most of these are proofs of concepts. What you see is what you get, so I'm pretty sure you would be stuck in radiant garden if it was released as-is

Although, sometimes you can find simple model swaps which are more usable

It woulda been cool if they would've ever taken an approach like that (I guess 0.2 counts) but in CoMs case it wouldn't make much sense to distort Sora's memories of the worlds like that

KH2 was the most FF KH game so far

which obviously makes it the best one

358/2 Days definitely feels a lot like Crisis Core, in that it's a prequel for a doomed character linked to the main character that sets things up (Sephiroth's declining sanity, Xigbar's interest in Beast), allows you to play key backstory moments (the Nibelheim reactor incident, Zack learning the Price of Freedom, Another Side Another Story) and features a lot of mission based content. Crisis Core doesn't revolve around the missions though and has a playable narrative while Days has narrative told through cutscenes between the missions with only a handful of missions playing into the larger story (mainly at the end with the final three missions being boss fights with Saix, Xion and Riku respectively). Days has a better levelling system, the randomness of how Zack and materia level up is annoying. Both were also released on portable systems in the late 2010's to expand on the lore of their respective franchises, Crisis Core being part of Compilation of Final Fantasy VII.

A benefit to the gameplay focusing around the missions is that it's almost like NG+ without having an official NG+, as well as being able to play the missions in the largest character roster of any Kingdom Hearts. Seriously, there's the whole original Organisation, Donald, Goofy, Riku, Mickey and Sora in Mission Mode.

Do I have to play KH1 and Chain of Memories first in order to enjoy KH2?

KH1 most likely
CoM you can get away with it

ideally if you can play them in order for the most information about the story

Should I play them in chronological order or in release order?

Release order for sure

in which case KH1 --> CoM/ReCoM --> KH2

KH2 starts off a year after CoM and picks up plot points that KH1 started

even though KH2 has it's own plot that it follows
