I don't blame the devs for not spending more money on bringing the servers back up as that would cost a pretty penny, and that's not worth it without there being enough people who actually plays it

Have read somewhere that they want to make everything look "human". Neither male or female. Everything should look "human".

In Pokémon GO. The player characters should look more "human". I do not know. Have seen that somewhere on the internet. It could be wrong though.

in a series well known for being limited to male, female, or genderless (in terms of the pokemon themselves), this seems like an odd choice

Maybe they will add a third option in the future. Who knows?
You know male, female and nonbinary for every person who do not think of themselves as male or female. Which is actually pretty nice!
And why not? It is a win for everyone.
