But in KH2 he was kinda easy with poor defense stats that if you chained a good combo with the Oblivion Keychain or even Kingdom Key it'll do a lot of damage

Nah not that much if you're careful with dodging...that's for KH2 Sephiroth that is

 

I only use Curaga when I'm down to 1 HP or if I couldn't interrupt the "Heartless Angel" attack in time

Sephiroth is a hard boss in the original KH, and they made him even harder in Final Mix. I almost always die whenever I fight him. 

 

In Kingdom Hearts II, you can just lure him into his slash combo throughout pretty much the entire battle. He's also really predictable.

Have you fought him with restrictions? Level 1, Kingdom Key, no accessories, no items, etc. It'd be pretty hard to do no magic and no damage as well.

Also, different people have different skill levels. Just because you think everything is a cakewalk doesn't mean that the rest of the planet finds it that easy as well.

He still has that extra bar at the beggining of the battle, ridiculous defenses, Sin Heartless Angel, that meteor attack, etc

 

And his attack patern his extremely offensive, you have almost no time to attack him. Even if a person does attack him, he'll spam those fire pillars right away.

 

 

And I'm still waiting for the proof that a person can beat Unknown in a minute.
